One thing I can say about working from home is that I throughly love my lunch break. As a teacher, I rarely get to eat a real lunch when we are in school. Now that I’m at home, I can actually take 30 minutes to make something tasty and enjoy it. Today I really wanted a big chef salad like I used to get at this place called Russ’s in Kalamazoo, MI. This came pretty darn close and I might just have to make another one tomorrow. I used romaine lettuce as the base and added diced roasted turkey, hard boiled eggs, red and green bell pepper, red onion, cucumbers, carrots, my favorite Gorgonzola, and Ken’s Steak House Country French. I don’t buy a lot of premade dressing, but this one is very tasty. Who else likes red French and blue cheese together? Is this just a Michigan thing? Let me know below.
