My whole roasted cauliflower with butternut squash chicken on garlic mayo, with feta and fresh parsley. Or as my 5 year old said, "why are you eating a brain for dinner?". After Ted lovingly passed on his cold to me, (why do children insist on sneezing in your face?) Today, I started to feel a bit more human so I needed a dinner packed full of veggies to help build my immune system back up. This was utterly scrumptious. I just added garlic powder, onion salt, and smoked paprika to the butternut squash and cauliflower, along with salt,pepper, and olive oil, and cooked for about 30 mins. I fried the chicken separately and added the same spices. Mixed some kefir with lemon and garlic, added feta, parsley and more lemon. Had some roasted butternut squash and onions in the fridge so I made this salad with some blanched cavolo nero, (or use another type of kale), mixed salad leaves, toasted almond flakes (or toasted pine nuts) and chopped spring onions tossed in a dressing I made with evoo, tahini, garlic, cumin and lemon juice. Normally I’d have this with quinoa instead of salad leaves but didn’t feel like making quinoa tonight. Simple Roasted Butternut Squash Ingredients: 1 butternut squash (about 2 pounds), peeled, seeded, and cut into 1-inch cubes 2 tablespoons olive oil 2 cloves garlic, minced 1 teaspoon dried thyme Salt and pepper to taste Fresh parsley, chopped (optional, for garnish) Directions: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. In a large bowl, toss the butternut squash cubes with olive oil, minced garlic, dried thyme, salt, and pepper until evenly coated. Spread the seasoned squash cubes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25 to 30 minutes, or until the squash is tender and caramelized around the edges, stirring halfway through cooking. Remove from the oven and transfer the roasted squash to a serving dish. Garnish with fresh chopped parsley, if desired. Serve hot as a side dish or use in other recipes as desired.
