Tonight, I had another go at cooking the fresh rice noodles - using the remaining 500g leftover from last week. This time, I didn't pre-cook the noodles at all. I laboriously separated the noodles by hand and then poured the sauce ingredients over the noodles before cooking them. The result was pretty good considering the noodles had been sitting in the fridge for 4 days, and there weren't too many broken noodles. Look at me keeping on top of things! This was tonight’s dinner Pad See Ew from @recipe_tin, which also happen to be my favourite Thai noodles. I tried to double the recipe because hers only served four but I definitely got my noodles to sauce ratio a little off. The flavour was very subtle but so good. I’ll definitely make it again and try to get the balance better because it has such potential. The recipe was super detailed about how to get the noodles caramelized which I appreciated because that always kicks it up a notch. I went with prawns instead of chicken for a change in protein and that was also enjoyable. Tonight, I attempted to cook a pad see ew/char kway teow using fresh rice noodles. It wasn't entirely a success - the flavour was great, but the noodles were all broken!! Back to the drawing board...........sigh........
De foto is minder smakelijk dan het gerecht is. Dit is Pad see ew en dat is een geroerbakt noedelgerecht dat veel wordt gegeten in Thailand. Vrij vertaald, gebakken noedels in sojasaus. Normaliter wordt het gegeten met Chinese broccoli maar ik heb er paksoi in gedaan. Daarnaast zit er kip in en natuurlijk sojasaus, oestersaus, vissaus en knoflook. I make Pad See Ew more often than Pad Thai at home. I really like these flat rice noodles and the sweetness of soy sauce in the dish. Made this batch with marinated pork tenderloin, onions, Chinese broccoli, carrots and yellow peppers. Turned out delicious and everyone enjoyed it.
