Who else is a huge cherry ripe fan! πŸ’ I made these a few weeks ago using my @vitamix_aunz Aer Disc container and I've been obsessed ever since! They are my take on the traditional Cherry Ripe Bars but made with healthier ingredients so they are completely vegan, refined sugar free and gluten free! Makes 8-10 small bars Ingredients: Cherry Filling: Β· 400g organic sour cherries (approx. 1 cup) thawed Β· 1 tsp vanilla extract Β· 1.5 tablespoons pure maple syrup Β· 1.5 cups desiccated coconut Β· 2 tablespoons coconut sugar Β· 1 tablespoon coconut cream (thick part from the can) Β· 2 tablespoons coconut butter (melted) Β· 1 tsp vanilla Coating: 200g vegan chocolate Method: 1. Line and grease a small loaf pan with baking paper (Mine was 24cm x 13cm). 2. Add your cherries*, vanilla and maple syrup to a small saucepan and cook for approximately 6 -7 minutes until the cherries become soft and have a jammy texture. Once you have a thick style consistency, remove from the heat and set aside to cool slightly. Transfer your cherry mixture into your Vitamix Aer Disc Container and blend on the highest (speed 10) for approximately 30 seconds. Add your coconut sugar and blend again for another 30 seconds. 3. To a large bowl add your coconut, coconut butter, coconut cream and mix well to combine. Add your cherry compote mixture and mix until the cherries are completely incorporated into the coconut mixture. Spoon your cherry mixture into your loaf pan and place in the freezer to harden for 2 hours. 4. Once firm to touch, slice your mixture into bars and then in half again (for me it made approximately 10 x bars). Line a separate baking tray with baking paper. 5. In a small microwave-safe bowl, melt your chocolate at 30-second intervals until the chocolate is fully melted. One by one, dip each of your bars into the chocolate and drain off the excess using a fork. Transfer immediately to your baking tray to set. Repeat the process until all of bars are coated in chocolate. 6. Pop the bars in the fridge to set for 30 minutes before serving. *Note: If you are using frozen cherries, make sure they are completely thawed, and you drain the excess moisture. #vitamixAUNZ
