Notes de fruita vermella, pa de pessic en licor, brioixeria, praliné… Bombolla fina i espectacular acidesa, punxant al principi però amable amb el pas dels minuts. Frescor non stop, maridatge garantit. 🍾 Lo Champagne Val Vilaine VV/R20 di Cédric Bouchard (Domaine Roses de Jeanne) è frutto del Pinot Noir raccolto da una vecchia vigna di oltre 37 anni d’età nei pressi del villaggio Celles-sur-Ource (Côte des Bar). Vendemmia 2020 con vinificazione della sola prima pressatura delle uve, fermentazione in acciaio con lieviti indigeni. A seguire la seconda fermentazione in bottiglia che si svolge con l’affinamento sulle fecce per circa 24 mesi prima del dégorgement senza liqueur de dosage. Champagne Blanc de Noirs che riflette perfettamente l’espressione del suo micro-terroir d’origine. Cédric Bouchard è molto discreto ma questo non ha impedito ai suoi champagne di fare molto rumore. È diventato una delle figure emblematiche di quello che viene chiamato il rinnovamento Champenois, con il suo stile molto particolare che va contro tutte le grandi case della Champagne. Ora è passato alla biodinamica, il che limita ancora di più i suoi rendimenti che sono molto bassi. Solo 3.600 bottiglie sono prodotte ogni anno da questa micro casa di Champagne. Savigny-les-Beaunes - 1987 Cave des Hautes Cotes 100% Pinot noir Couverte de poussière, emmêlée dans les toiles et déchirees par endroit, cette bouteille à traversé les années. Le rouge violacé de ses jeunes années à laissé place à un rouge tuilé rappelant les oranges sanguines et les pistes de terre battues. Au nez c'est fruité, encore et toujours. C'est délicat et concentré, ça rappelle l'été, les canicules, les sorbets à la fraise, les croissants grillés fourrés à la confiture de groseille de mamie. En bouche, c'est déconcertant. Une trame vive et explosive, comme une flèche, qui te traverse le palais. L'acidité est là, toujours là, et c'est pour ça que ça s'est aussi bien tenu. La gourmandise est au rendez-vous, liqueur de baies rouges et noirs, du poivre noir et blanc, une pointe de badiane. Ça tire vers le grain de café torrefié et de chocolat chaud. C'est complexe et pourtant si évident. M On a découvert ça sur un rack, sage oubliée dans la pénombre silencieuse de cette pièce. On a ouvert ça sur un magret rosé accompagné de pommes de terres rissolées et de romarin du jardin. What a privilege to be able to look at a 2019 and 2018 vintage of Armand Rousseau Gevrey Chambertin in the same week @botanicalhotel The 2018 is drinking better than the 2019, in my opinion. However, 2019 was the second of three very warm years for Burgundy. The heat stress and lack of water affected the vines more in 2019 than 2018. As a result, the alcohol levels and vineyard management was more difficult to control in 2019. Village level 2018 Burgundy at present is 👌 The 2018 Rousseau AC is still bright with fresh red cherry, cranberry and hints of pomegranate. There is that typical sanguine streak of Rousseau balanced by aromas of wet autumn leaves and fresh green moss. Aromas of feathered game, Chinese 5 spice, dried rose petals, dried hibiscus flowers, redcurrant tea and pink potpourri all feature in harmony. Every swirl of the glass reveals more layers of complexity. Such power and elegance all encompassed in one swift. 2002/2010 La Tâche Monopole Big, structured, powerful, mineral wines no matter what vintage. Many experienced tasters say 20 years is minimum and it’s better to wait longer. Year ago we tasted 2010 and sadly it was so tight and muted that we decided to not count it during voting. Extraordinary vintage but terroir is too strong and at that time vinification delivered extra grip. 2002 was tested in February this year. Well, what a wine! I tasted it just after opening, 3 hours after decantation and 6 hours after. Different stages, I like all of them really. Colour showed some evolution with garnet and brown rims. Developing nose with some evolution, more than Romane Conti from 2000, strong gamy character. Ripe, sweet strawberries, cherries, rhubarb, red currants and cranberries. Licorice, coffee, cocoa powder – strong nose, big structure. Some orange, cinnamon, dried red apple, red grapefruit oil, blood orange, some meat, charcoal, a bit of menthol from stems, wet leaves as well, almost chewy nose but with plenty of elegance. P: powerfull, medium high acidity, a lot of tannins, salty with white caramel/chocolate, gamy, some heat as well, not that elegant, still big, meaty, salty, even with hint of pu erh tea, some clay, red cherries, blood, dark chocolate, coffee beans. Strong acidity, mouth watering, big grip 40-50 seconds, yet not as long as RC Probably still some years ahead, but I did enjoy that a lot.
