Q: What is your overall approach and main inspirations for the drinks at Pelican Grill?
For this menu at the grill, it was important to be inclusive. One thing that stands out is that our cocktail menu is fully available in a non-alcoholic version for people who, for any reason, decide not to drink. We want everyone to feel included. Furthermore, I wanted the team to express themselves. Each drink was made by one of our bartenders, each starting with a base spirit and creating a different style of drink. This way, we can please everyone and that’s how the menu was born.
