Chicken and Black Bean Flautas
Crispy Rolled Chicken and Black Bean Tortillas
RecipeIngredients:
2 cups cooked shredded chicken
1 cup canned black beans, drained and rinsed
1/2 cup corn kernels
1 cup shredded cheese (cheddar or Monterey Jack)
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
Salt and pepper to taste
10 small flour tortillas
Oil for frying
Directions:
In a large bowl, combine the chicken, black beans, corn, cheese, cumin, chili powder, garlic powder, salt, and pepper.
Place about 2 tablespoons of the filling on the edge of each tortilla and roll tightly.
Heat oil in a large skillet over medium heat.
Place the flautas in the oil seam-side down and fry until crispy and golden brown on all sides, about 2-3 minutes per side.
Drain on paper towels and serve hot with sour cream and salsa.
